Food safety requirements for egg have been updated in the NSW Food Regulation 2025.
The key change for egg producers is the requirements for managing Salmonella Enteritidis (SE) risks have moved from biosecurity legislation to the Food Regulation 2025.
For licensed egg producers in NSW, this means:
- Permanent requirements for licensed egg producers to manage SE food safety risks are now a condition of licence. Affected licensees will receive a copy of their licence with updated conditions.
- All licensed egg producers in NSW must comply with Part 10 Egg Food Safety Scheme and Schedule 8 of the Food Regulation 2025.
- From 1 September 2025, the Biosecurity (Salmonella Enteritidis) Control Order 2024 is revoked.
How to comply
To comply with their condition of licence, licensed egg producers must meet the following requirements of the Food Regulation 2025:
- Part 10 – Egg Food Safety Scheme
- Section 172 – egg primary food production businesses must undertake mandatory SE testing at each individual shed and each individual poultry housing area.
- Schedule 8 – identify the production areas on their property and introduce strict hygiene measures within those areas and for people entering and exiting them.
